SOUTH OF THE BORDER CASSEROLE

Ingredients:

1 (15 oz.) can whole kernel corn, drained
1 (15 o.) can black beans, rinsed and drained
1 (10 oz.) can diced tomatoes with green chiles
8 oz. sour cream
1 (8 oz.) jar chunky salsa
2 C. shredded Cheddar cheese
2 C. cooked brown rice
1/4 tsp. pepper
1 bunch green onions, chopped
1 (8 oz.) pkg. Monterey Jack-jalapeño cheese, shredded
1 (21 oz.) can sliced olives

Preheat oven to 350ºF.

Combine the first 8 ingredients. Place into a lightly greased
13 x 9-inch baking dish. Sprinkle with the remaining ingredients.
Bake for 45 minutes.

Yields 6 to 8 servings.
