Southern Cornbread

3 heaping T self rising corn meal
1 heaping T self rising flour
1 teaspoon bacon drippings
1 egg beaten
1/2 cup buttermilk
4 slices bacon or crackings (optional)

Heat bacon drippings in a 8 inch cast iron skillet at 450° for 5 minutes.
Stir together all ingredients in a bowl. Pour batter into hot skillet.
Bake at 450° for 20 minutes or until golden brown.

If you want bacon cornbread cook bacon until crisp or use pre cooked and chop coarsely. If you like cracklings you can use those instead no pre cooking needed.
Add bacon to mixture before pouring into the skillet.

I use bacon drippings heated in a cast iron skillet for the tastiest corn bread with a nice crisp crust.

I do the same, the recipe was a bit vague so I made it clear.

Do you ever use bacon drippings to make a milk gravy? Bacon gravy over biscuits is really good.

When I make gravy for biscuits I use pork sausage and use the dripping from the sausage for the gravy.

I have used both bacon drippings and sausage drippings to make milk gravy or just plain pork gravy thickened with flour. In warm months I sometime add a fresh tomato and make tomato gravy. Yum yum.
