Southern Sweet Potato Bread

i FOUND THIS RECIPE IN A BOOK SOME TIME AGO IT IS VERY GOOD WITH HOT COFFEE .

11/2 CUPS GOLD MEDAL WHITE SELF-RISING FLOUR

1 CUP SUGAR

1 TEASPOON NUTMEG

1 TEASPOON CINNAMON

1/2 TEASPOON GINGER

1/2 CUP OIL

2 TABLESPOONS MILK

2 EGGS, SLIGHTLY BEATEN

1 CUP MASHED COOKED SWEET POTATOES

1 CUP CHOPPED PECANS

1/2 CUP RAISINS GOLDEN OR DARK

PREHEAT THE OVEN TO 325*. GREASE BOTTOM ONLY OF 8X4-INCH LOAF PAN.
IN A LARGE BOWL, COMBINE FLOUR, SUGAR, AND SPICES MIX WELL.
ADD OIL. MILK AND EGGS BLEND WELL. ADD SWEET POTATOES, PECANS AND RAISINS, MIX WELL.
POUR INTO GREASED PAN.
BAKE AT 325* FOR 1 1/4 TO 1 1/2 HOURS OR UNTIL TOOTHPICK COMES OUT CLEAN. COOL IN PAN 15 MINUTES. REMOVE FROM PAN PLACE ON A WIRE RACK. COOL 1 HOUR OR UNTIL COMPLETELY COOLED. WRAP TIGHTLY AND STORE IN THE REFRIGERATOR.
