Speedy Sausage & Black Eyed Peas

1 lb. ground pork sausage
1/2 c. onion, chopped
1 jalapeño pepper, seeded and chopped
16-oz. can black-eyed peas, drained and rinsed

Brown sausage, onion and jalapeño in a skillet over medium heat until sausage is done; drain. Stir in peas and heat through. Serves 4.
