Spiced Red Cabbage
This recipe is much better after sitting for a couple of days and letting the spices permeate the cabbage.
1/2 cup seedless raisins
2 tablespoons fat or bacon drippings
5 cups shredded red cabbage
1 cup sliced apples
2 tablespoons cider vinegar
3/4 cup chopped onions
1 teaspoon mixed spices, tied in wet cheesecloth (allspice, stick cinnamon, cloves, etc.)
1/4 cup water
3/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons sugar
Place all ingredients in a pressure cooker. Cover and set control at 15 minutes.
Cook five minutes after control starts to jiggle. Reduce pressure instantly. Remove spices.
