Spicy Caramel Sauce for cake, baked apples, etc.

Spicy Caramel Sauce

Makes about 1-1/4 cups.

1 (14-oz) can sweetened condensed milk (not evaporated milk)
2 to 4 tsp water
1/2 tsp ground cinnamon
1/4 tsp almond extract

Caramelize sweetened condensed milk (instructions follow).

Add remaining ingredients; mix well.

Serve warm over ice cream, cake, baked apples or apple dumplings. Refrigerate leftovers.

To caramelize sweetened condensed milk:

Oven Method: Preheat oven to 425. Pour sweetened condensed milk into 8- or 9-inch pie plate. Cover with aluminum foil; place in shallow pan. Fill pan with hot water. Bake 1 to 1-1/2 hours or until thick and light caramel-colored.

Microwave Method: Pour sweetened condensed milk into 2-quart glass measure. Cook on 50% power (medium) for 4 minutes, stirring briskly every 2 minutes until smooth. Cook on 30% power (medium-low) for 12 to 18 minutes or until thick and light caramel-colored, stirring briskly every 2 minutes until smooth.
