Spicy Chipotle Casserole
1 1/2 lbs ground beef
1 can chipotle peppers in adobo sauce
1 (24 oz) can diced tomatoes, undrained
2-3 cans hominy, well drained
16 oz cheddar cheese, shredded
In a very large skillet, brown ground beef and drain well. Add as many chipotle peppers as you like (keeping in mind that they are very hot). Mix tomatoes, hominy and 1/2 the cheese; add to meat mixture and stir well. Pour into a lightly sprayed 9 X 13 casserole dish. Bake in preheated oven for 45 minutes, covered. Uncover and sprinkle on remaining cheese. Bake for an additional 10-15 minutes or until cheese is melted. Note: If you want it even spicier, use tomatoes with green chilies (Rotel).
