Spicy Tomato Sauce
1 tbsp olive oil
4 slices bacon, diced
1 large onion, finely chopped
2 garlic cloves, smashed and chopped
6 large tomatoes, peeled, seeded and chopped OR canned tomatoes
1 fresh jalapeno pepper, finely chopped
1 tbsp basil
1 tsp chili powder
¼ tsp sugar
¼ cup grated Parmesan sheese
salt and pepper
Heat oil in skillet. Cook bacon until crisp then remove, leaving fat in pan (this adds the flavour). Set bacon aside.
Add onion and garlic to pan; cook 2 to 3 minutes over low heat.
Stir in tomatoes, jalapeno pepper, seasonings and sugar. Cover and cook 20 minutes over low heat; stir occasionally.
Remove cover and continue cooking 15 minutes.
