Spinach Chicken Dish
1/2 onion, chopped
1 (10 oz.) pkg. frozen creamed spinach, defrosted
4 chicken cutlets/tenders
3/4 cup Italian seasoned bread crumbs
1/4 cup parmesan cheese, grated
Saute onion in oil and add creamed spinach. Combine bread crumbs and parmesan cheese in a bowl and put chicken cutlets into mixture to coat. Lightly oil a casserole dish. Lay chicken cutlets in dish, and then spread spinach mixture on each and top with remaining bread crumb/cheese mixture. Bake at 350 degrees for about 30 to 45 minutes, depending on size and amount of chicken.
