Spinach Fruit Salad

8-10 spinach leaves or romaine lettuce leaves
6-8 pink grapefruit sections
6 kiwi fruit slices
2 tsp toasted sliced almonds
Sweet & Sour Dressing:
1 tsp white vinegar
2 tbsp golden syrup (corn syrup)
1 tsp prepared mustard
Fold spinach leaves over using 4 or 5 per plate. Make a row just off center of plate, overlapping ends so as to make an unbroken sort of ridge. Place grapefruit sections in a row in front of leaves. Place kiwi fruit slices in a row in front of grapefruit. Sprinkle almonds over fruit.
Dressing: Stir vinegar, syrup and mustard together in small bowl. Drizzle overn spinach and fruit. Serves 2.
** You can always just tear up the spinach or romaine leaves into a bowl. Add the grapefruit and kiwi. Sprinkle with almonds. Drizzle dressing over all and lightly toss.
