Spotted Fudge Cookies
1 cup butter
2 cups sugar
2 large eggs
1 teaspoon vanilla
1/2 teaspoon salt
1 teaspoon baking soda
2/3 cup cocoa powder
2 cups all-purpose flour
1 bag (12 ounces) white chocolate chips
Preheat oven to 375 degrees.
In an electric mixer bowl, cream butter and gradually add sugar; mix in eggs,one at a time, vanilla, salt and baking soda. Mix well.
Slowly mix in cocoa powder and flour; mix until dough comes together. (Don’t over mix). Stir in white chocolate chips.
Place rounded tablespoonfuls of dough onto ungreased cookie sheet. Place in oven and turn oven down to 350 degrees and bake for 8 minutes. (DO NOT OVERBAKE).
Remove from oven and let stand for a minute or two; remove from cookie sheet and set on plain paper or glass plates and let cool.
Cookies will firm up as they cool.
Makes about 4 dozen cookies
