Srawberry Rhubarb Crumb Pie

We had this last night and it was so delicious served warm with freshly whipped cream on top.

1 egg
1 C sugar
2 T all-purpose flour
1 teaspoon Vanilla
3/ lb Rhubarb cut into 1/2" pieces
1 pint fresh strawberries, halved
1 9" unbaked pie shell

Topping:
3/4 Cup all-purpose flour
1/2 C packed light brown sugar
1/2 Rolled oats
1/2 CUp cold butter, cubed

  1. Beat egg in large mixing bowl and add sugar, flour, an vanilla. Gently fold in the rhubarb and fresh strawberries. Pour into pie shell.

  2. Prepare topping by combining the flour, brown sugar, and oats. Mix together, Added cubed butter into the mixture with with your hands or w fork until it is crumbly with only pea sized lumps of butter throughout. Sprinkle over the fruit in the pie.

Bake at 400 degrees for 10 min an then turn the oven down to 350 an bake for additional 35-45 minutes or until golden brown and bubbly.
