Stagecoach Chicken

3/4 cup Ranch salad dressing
1 egg, slightly beaten
4 large boneless skinless chicken breast halves
1/2 cup flour
1/4 teaspoon pepper
4 cups Cornflakes
1/4 cup butter or margarine, melted

Preheat oven to 350 degrees. In plastic bag, crush Cornflakes with rolling pin. Put on a plate.

In a medium bowl, combine Ranch dressing with egg. On another plate mix flour with pepper. Rinse and dry chicken thoroughly. Dredge chicken pieces in flour mixture, then dip in dressing mixture and then roll in Cornflakes. Arrange chicken in a 9x13 inch pan. Drizzle with melted butter or margarine. Bake for 1 hour or until thoroughly cooked.

Sounds really good, and sorry, yes…I’m again going to mess with this recipe & give it a try with lower fat ingredients. I’ve never thought of using ranch dressing with chicken before but can’t wait to try. Thanks for the post.
