This is such a nice, light dessert. Just wonderful after a big meal that’s craving a sweet touch!!!
STRAWBERRY AND ALMOND PAVLOVA
1/2 Cup Sliced Almonds
4 Egg Whites
1/4 tsp Cream of Tartar
2/3 Cup Sugar
1/3 Cup Icing Sugar
1 Tbsp Cornstartch
1/4 tsp Vanilla
2 Cups Whipped Cream (500 ml carton of whipping cream)
1/2 tsp Vanilla
4 Cups Strawberries, sliced
Brown almonds for 5-8 minutes at 350. Set aside.
Grease and flour a foil lined baking sheet. Using a 9" cake pan, mark a circle on the baking sheet with a toothpick.
In a large bowl, mix the egg whites and cream of tartar with electric mixer until there are soft peaks. Add half of the sugar gradually while beating until there are stiff peaks.
In a separate bowl, mix remaining sugar with icing sugar and cornstarch. Sprinkle over egg white mixture. Fold in almonds and vanilla.
Spoon into foil circle and create a nest shape.
Bake at 275 for 1 1/2 hours.
Let cool completely. Transfer onto a serving plate.
Just before serving, whip cream and spoon it into the nest. Decorate with strawberries.
