Strawberry Omelet
4 eggs
2 Tbs orange juice
1/4 tsp grated orange zest
1/4 tsp salt
1 Tbs flour
1 tsp granulated sugar
1 Tbs butter
1/2 cup strawberry preserves
1 Tbs sour cream for garnish
Preheat oven to 325-F. Separate eggs, beat whites
until stiff. Beat yolks, blend in orange juice,
orange zest, salt, flour and sugar. Fold yolk mixture
into beaten whites until it’s a uniform color. Melt 1 Tbs butter
in a 10 inch skillet. Pour in omelet mixture. Cook on stovetop slowly
until bottom is browned. Place in oven until top is set, about 10
minutes. Spoon strawberry preserves over 1/2 of omelet, fold in half.
Garnish top with sour cream. Serves 2.
