Strawberry parfait pie

I have no idea who the source of this recipe is, I just know my mother was making this when we were kids (um, 50 plus years ago). It’s very simple & great for this time of the year as it calls for fresh strawberries.

Dissolve one small (approx. 3 ounce) box of regular (not sugar free) Jell-o in 1 1/4 cup boiling water, stirring till dissolved

Add one pint regular vanilla ice cream by large spoonfuls, stirring till melted

Chill till mixture mounds slightly when dropped from a spoon, being careful to check

Gently fold in 1 cup sliced fresh strawberries

Pour int a prepared pie shell of your choice. We prefer a light crust, as in a graham cracker, shortbread, or a light butter crust
over a heavy pastry crust

Chill several hours till firm, can be made ahead

Slice & serve topped with fresh (or canned) whipped cream & a few slices of fresh strawberries for decoration

Refrigerate leftovers.

I know, it is so 1950’s but it sure is a great, light summer dessert.
