Stuffed artichoke casserole


  • 1 large onion, chopped
  • 1/2 teaspoon chopped garlic
  • 1 tablespoon olive oil
  • 2/3 cup reduced-sodium fat-free chicken broth, divided
  • 1/2 teaspoon dried oregano leaves
  • 1 can (14 ounces) artichoke hearts, drained, sliced
  • 2 cups seasoned stuffing cubes
  • Salt and pepper, to taste


Combine onion, garlic, oil, and 3 tablespoons chicken broth
in 2-quart glass casserole. Microwave on high power, covered,
3 to 4 minutes, until onion is tender. Stir in remaining
ingredients, except salt and pepper, mixing well. Cover
and microwave on high until stuffing is heated through,
about 5 minutes. Season to taste with salt and pepper.
