Stuffed Haddock

I love seafood and am always trying to sneak more into a recipe. Thank goodness I live in Maine so it is affordable.

Stuffed Haddock

1.5-2 lbs fresh haddock fillets
1 tsp Natures Seasoning
1/4- 1/2 cp milk
1/2 stick butter (broken into pieces)

Pour milk into casserole dish. Lay fish so flat and not on top of each other. Sprinkle each with Natures Seasoning. Place butter pieces around milk but not on fish.

1 stick butter melted
1 cp monterey jack and cheddar cheese blend shredded
3/4 cp crushed club crackers (or ritz)
1 cp shredded crab ( imatation meat fine)
Natures Seasoning to taste

Mix together and smooth out over the top of each fillet covering top.

Finally place med shrimp on top I use about 8-10. If I am feeling extra seafood loving…I add some small scallops. Also If I am feeling extra cheesy I add some on top.

Bake in a 375 degree oven for 25 mins. On middle rack. YUMMMMEE

I had some catfish, trout and striped bass in the freezer. Not enough of any one of them to feed my crew but combining them and using the stuffed haddock recipe it did the trick.

I didn’t use as much seafood stuffing as the recipe called for (its kinda pricey here) but it still came out good. Thanks for a unique recipe for fish.
