Capers

Remove the Stalks from the mushrooms and clean with damp kitchen paper, butterfly using flat edge of a cleaver, fry in pan with a little olive oil until cooked,

While this is frying chop the Capers, garlic, parsley and lemon zest together, sprinkle on top a teaspoon of the mixed capers, lemon zest, garlic and parsley, top with cubed mozerella and the breadcrumbs and place in the oven at 200c (400 F) for 10 mins or until cheese has melted and breadcrumbs are crispy.
