Stuffed Pork Tenderloin
1 pork tenderloin
1 box of turkey stuffing mix
Make the stuffing according to package directions. Set aside to cool.
Cut tenderloin in half (not all the way through) to open it up to make a big flat piece. Pound with hammer to flatten it out evenly.
Spread cooled stuffing in middle of tenderloin; fold up the sides and tie with butcher’s twine (or use toothpicks).
Brush oil on the tenderloin and sprinkle with rosemary, thyme, pepper, and seasoned salt.
Place in shallow baking dish and bake in a preheated 400 degree oven for about 40 minutes or so (depends on size of tenderloin), until thermometre reads 165 degrees.
During last 10 or 15 minutes of cooking, brush on some barbecue sauce.
When done, cover with foil and let sit for 10-15 minutes before slicing.
