Stuffin' Egg Muffins

1 pkg (6oz) chicken stuffing mix
12 eggs
3 Tbsp real bacon bits
1/2 cup shredded cheese

Preheat oven to 400 degrees.
Prepare stuffing mix as directed on pkg, omitting stand time. Spray muffin cups with cooking spray. Press 1/4 cup stuffing mix firmly into bottom and up sides of cups, forming a 1/4 inch rim around the top.

Crack 1 egg into each cup, sprinkle with bacon bits and cheese.
Bake 20 minutes or until yolks are set. Let stand 5 minutes before serving.

I also like to scramble the eggs and pour them into the cups, my family likes the yolks broken, so that is easier for me.
This recipe will also make a good casserole, follow all the above directions, except put it all in a casserole instead.
