Sugarplum Pudding With Glaze (Prune Cake)

This is a recipe from my childhood that I got in 4-H Club. Geeze, it is is at least fifty years old. I can see myself with my little apron on getting this recipe out of the cabnet drawer to make this cake in my mind’s eye. Remember the Youngstown white enamel cabnets?

It was made quite often and the family liked it. This was one way my sister and I ate prunes!!!

Sugarplum Pudding With Glaze

2 cups sifted self rising flour
1 1/2 cups sugar
1 1/4 teaspoons of soda
1 teaspoon of nutmeg
1 teaspoon of allspice
1 teaspoon of cinnamon
3.4 cup salad oil
3 whole eggs
1 cup buttermilk
1 cup of cooked prunes
1 cup of chopped nuts

Grease and flour one oblong pan 9 x 13.
Sift dry ingredients together. Stir in all other ingredients in the order given. Bake 40 minutes at 325 degrees.

Glaze

1 cup sugar
1/2 cup buttermilk
1 teaspoon vanilla
1 Tablespoon white corn syrup
1/2 cup (1 stick) butter

Combine in a pan and bring to a boil. Pour over the pudding while it is hot.
