Sweet and Sour Meatballs
Servings: Makes 4 Dozen servings
1 1/2 pounds lean ground beef
1 cup bread crumbs
1 egg, slightly beaten
4 teaspoons beef-flavored instant bouillon
1 1/2 cups apricot preserves
2 tablespoons ReaLemon® Lemon Juice from Concentrate
In bowl, combine meat, bread crumbs, egg and 2 teaspoons bouillon; shape in 1 1/4 inch balls.
In large skillet, brown meatballs. Remove from pan; pour off fat.
In skillet, combine preserves, ReaLemon® and remaining 2 teaspoons bouillon. Over low heat, cook and stir 15 minutes. Add meatballs; simmer uncovered 10 minutes.
