Sweet Pea Dip
Peas are a veggie favorite for most kids; easy to keep on hand in the freezer, their bright color and mild flavor makes them perfect for a last-minute dunk.
Makes about 1 1/3 cups
Ingredients
2 cups frozen peas
2 tablespoons olive oil
1 to 2 tablespoons fresh lemon juice
1 clove small garlic, peeled
1 teaspoon salt
Directions
-
In a small microwave-safe bowl, combine peas and a couple of tablespoons of water; cover loosely with plastic wrap and microwave on high until thawed, for about two minutes.
-
Drain peas well and transfer to bowl of food processor. Add oil and lemon juice.
-
On cutting board, coarsely chop garlic. Sprinkle with salt; with flat of knife blade, mash salt and garlic into coarse puree. Scrape garlic and salt into food processor.
-
Process for a minute or two until smooth. Cover and refrigerate until kids are ready to eat.
Serve with fresh veggies and pita triangles brushed with olive oil and baked at 350 F until crisp, about 10 minutes.
