Sweet Pea Dip

Peas are a veggie favorite for most kids; easy to keep on hand in the freezer, their bright color and mild flavor makes them perfect for a last-minute dunk.

Makes about 1 1/3 cups

Ingredients

2 cups frozen peas
2 tablespoons olive oil
1 to 2 tablespoons fresh lemon juice
1 clove small garlic, peeled
1 teaspoon salt

Directions

  1. In a small microwave-safe bowl, combine peas and a couple of tablespoons of water; cover loosely with plastic wrap and microwave on high until thawed, for about two minutes.

  2. Drain peas well and transfer to bowl of food processor. Add oil and lemon juice.

  3. On cutting board, coarsely chop garlic. Sprinkle with salt; with flat of knife blade, mash salt and garlic into coarse puree. Scrape garlic and salt into food processor.

  4. Process for a minute or two until smooth. Cover and refrigerate until kids are ready to eat.

Serve with fresh veggies and pita triangles brushed with olive oil and baked at 350 F until crisp, about 10 minutes.
