5 lbs boiled and cleaned beets, cut into bite size pieces
2 C sugar
2 C apple cider vinegar
2 C water
3 1/2 tablespoons pickleing spices
8 to 10, depending on size of beets, Sterile jars required. (I use 12 oz jars)
Bring sugar, water and vinegar to a low boil, add pickleing spices and let simmer for 5 minutes. Use a strainer unless you want the spices in your beets and pour liquid over beets to 1/2" from top of jar. Clean tops of jars and seal.
Water bath for 10 minutes, remove and check for seal. If not sealed, bath for 10 minutes more.
Will store in pantry for 6 months.
