My son and sister in law’s favorite dish at Christmas.
Sweet Potato Soufflé (Casserole)
2 cups cooked sweet potatoes
¾ stick of butter that is melted
½-teaspoon cinnamon
½-teaspoon nutmeg (I leave this out)
2 eggs beaten
½-cup sweet milk
1 ¼-cup sugar (I use ¾ cup)
Mix well and pour into a well-greased casserole dish.
Bake at 400 degrees for 30 minutes.
While this is baking make the topping.
Our Topping:
1/2 cup brown sugar
1/4 cup flour
2 1/2 Tablespoons melted butter
1/2 cup chopped nuts
Combine brown sugar, flour, butter, and pecans, mixing until crumbly; sprinkle over sweet potatoes.
Bake at 350° for 45 minutes.
NOTE: Sometimes I do not use the topping but a couple of minutes before it finishes baking, I put marshmallows on top to brown.
