Sweet Potato Cookies
1/3 cup milk
2-2/3 cups sifted all-purpose flour
1-1/4 teaspoons baking powder
3/4 teaspoon salt
2/3 cup butter
1/3 cup white sugar
1-1/4 teaspoons ground cinnamon
2/3 cup honey
1-1/3 cups peeled, shredded sweet potato
3/4 teaspoon baking soda
Preheat oven to 350 degrees F (175 degrees C).
Combine sugar and butter or margarine. Blend in egg, honey, and sweet potato.
Sift together flour, baking soda, baking powder, salt, and cinnamon. Blend in butter mixture and milk.
Drop from a teaspoon 2 inches apart onto greased cookie sheets. Bake for 15 to 20 minutes until brown.
*May frost with a cream cheese frosting.
