Sweet Potato Crunch
3 cups mashed sweet potatoes
1 cup sugar
2 eggs
1 T. vanilla
pinch of cinnamon
pinch of nutmeg
1/2 cup butter, melted
TOPPING:
1 cup brown sugar, packed
1/2 cup flour
1 cup chopped pecans
1/3 cup butter
Mix sweet potatoes, sugar, eggs, vanilla, spices and butter thoroughly. Mix all the topping ingredients together with a fork and sprinkle on top of sweet potatoes. Bake for 30 minutes.
