Sweet Potato Muffins

1/4 cup low fat margarine
1/2 cup Splenda brown sugar for baking
2 eggs, beaten
1 cup mashed sweet potatoes ( canned fine)
3 Tablespoons orange juice concentrate
2 cups self-rising flour, unsifted
1/4 teaspoon nutmeg
1/4 teaspoon all spice
1/4 teaspoon mace
3/4 cups chopped nuts

Preheat oven to 350. Grease well 12 regular muffin tins or 24 Small ones. Cream margarine and Splenda brown sugar well. Add eggs, potatoes and orange juice. Beat until well blended. Add flour, spices and nuts. Stir until well mixed. Fill muffin tins 3/4 full. Bake about 18 to 20 minutes or until done. (May also be baked in a 9 x 5 x 3" loaf pan for about 45 to 50 minutes.)
