Sweetpotato Ham Loaf
1 lb smoked ham, ground
1/4 lb beef, ground
1/4 lb pork, ground
1/4 tsp salt
1/8 tsp pepper
1/4 cup minced onion
1 small green pepper, minced
1/2 cup chopped celery
1/3 cup quick-cooking oatmeal, uncooked
1 egg, beaten
1/2 cup milk
3-1/2 cups mashed sweetpotatoes
Combine all ingredients, except sweetpotatoes, and mix well.
Arrange half of meat mixture in greased loaf pan, cover with sweetpotatoes and top with remaining meat mixture.
Bake in moderate oven (350) about 1 hour. Serves 10.
