Taco Soup

This is an extremely easy soup to make and everyone in my family loves it.

1 ½ lb ground beef
1 small yellow onion, chopped
1 small green pepper, chopped
1 can (16 oz.) Dark Red Kidney beans
1 can (16 oz.) Pinto beans
1 can (16 oz.) Hominy (I substitue corn)
1 can (14.5 oz.) tomatoes (I used chopped with garlic)
1 can (6 oz.) tomato sauce
1 can Rotel tomatoes
1 pkg Taco seasoning
1 pkg Ranch dressing

Cook ground beef, onion and pepper until meat is browned. Drain excess grease. In a crock pot combine beef mixture with remaining ingredients. Cook all day (or longer) Top with sour cream and cheese.

Taco Seasoning Mix
1 T. Chili powder
½ t. salt
1 T. Dehydrated minced onion
½ t. paprika
½ t. garlic powder
1 t. cumin
1/4 to ½ t. red pepper

Combine all ingredients in small plastic bag. Seal,
label, date and store in tightly covered container.
For best results use within three months.
Yield: One packet

                        Taco Soup

1 lb. Hamburger
1 packet Taco Seasoning Mix
1 46 oz. Can tomato juice
1 16 oz can Red Kidney beans
1 16 oz. Can Black beans
1 10 oz. Pkg. Frozen corn

Brown ground beef in large saucepan. Add packet of Taco Seasoning mix, tomato juice, and beans (well rinsed).
Simmer ten to fifteen minutes. Add frozen corn.
Simmer another 10 minutes. Serve with tortilla chips and garnish with cheese, sour cream, and olives.
