Taco Stuffed Pepper Cups

2 medium green bell peppers 1/2 lb. ground beef or turkey 2 T. chopped onion 16 oz. can kidney beans rinsed and drained 8 oz. can tomato sauce 3 T. taco seasoning 1/4 c. sour cream 1/4 c. shredded cheddar cheese 1/4 c. chopped tomatoes
Cut peppers in half lengthwise and clean. Cook in boiling water 5 minutes, drain. Cook beef and onion, drain, add beans, tomato sauce, and taco seasoning. Place pepper halves in 8 inch square baking dish. Fill with meat mixture. Bake 10 minutes at 350 or until peppers are tender. Top with sour cream, cheese and tomato.
