Take-Out Chicken

3 boneless skinless chicken breasts, cut into 1 1/2" pieces
2 tbs olive oil
1 clover garlic, minced
1/2 tsp crushed red pepper flakes
1/4 cup apple juice
1/3 cup brown sugar
2 tbs ketchup
1/2 cup water
1/3 cup soy sauce

Heat oil in a large skillet. Brown chicken pieces on all sides. Remove chicken and set aside. Add remaining ingredients, heating over medium heat until well-mixed. Add chicken and bring to a boil; reduce heat and simmer for 10 - 15 minutes. Serve over hot rice.
