Tater Tot Casserole
1 small onion, chopped
1 lb lean ground veal (or veal/pork mixture)
1 lg bag tater tots
1 can cream of chicken or mushroom soup
Using a large skillet, heat and drizzle with a little olive oil to keep meat from sticking; add veal and onion. Cook until meat is done and onion is translucent; add undiluted soup and a small amount (approx 1/8 cup) of water. Stir well and pour into a lightly greased casserole dish and top with tater tots. Bake at 350 for 30 minutes. If desired, can put under the broiler for a couple of minutes to crisp the top.
