This is a recipe we fix for church potluck gatherings. It’s a modified version of a very old Betty Crocker Cookbook recipe. The children seem to love it.
2 large onions
2 large green bell peppers
Saute the above in 3 tablespoons of Canola oil until onions are translucent.
Add 1 pound of ground beef and continue cooking until the meat crumbles.
Stir in the following:
2 cups whole tomatoes (squeezed apart)
1/2 cup uncooked rice
1 teaspoon chili powder
2 teaspoons salt
1/8 teaspoon ground pepper
Pour all of the above ingredients into a 2 quart baking dish. Cover and bake at 350 degrees for 45 minutes.
Remover cover and bake for an additional 15 minutes.
Serves about six.
