Living in the UK means that no one has Thursday off work to celebrate Thanksgiving so we always have it the Saturday before or after. Last night, I just cooked some frozen mixed vegetables, chopped up some leftover turkey and stuffing, added the left over gravy and heated it all up. I put it in a deep dish pie plate and covered it with pie pastry brushed with egg. I baked it in the oven for 30-40 min. until heated through and the crust was brown and served it with home made bread. I hope those of you that are celebrating Thanksgiving this Thursday will have a great day and remember so many of the wonderful things we have to be thankful for!
