Three Cheese and Spinach Pizza

Olive Oil No-Stick Cooking Spray
1 small onion, chopped (1/2 cup)
2 teaspoons minced fresh garlic
1 pkg. (10 ounces) fresh spinach,stems removed, coarsely chopped
1/4 teaspoon salt
1/8 teaspoon crushed red pepper
1 pizza crust (12 inches), pre-baked
1 cup shredded part-skim mozzarella cheese, (4 ounces), divided
3/4 cup low-fat ricotta cheese
1/4 cup grated Parmesan cheese

Preheat oven to 450F. Spray large saucepan with cooking spray. Cook onion and garlic over medium-high heat until crisp-tender, about 3 minutes, stirring frequently. Add spinach, salt, and crushed red pepper; cook, stirring, about 2 minutes until spinach wilts and mixture is fairly dry.

Place crust on baking sheet; spray with cooking spray for 3 seconds. Sprinkle 1/2 cup mozzarella cheese over crust; top with spinach mixture. Mix remaining mozzarella, ricotta, and Parmesan cheeses in a bowl. Spoon mixture over pizza (spinach will not be completely covered). Bake 15-20 minutes, or until cheese is golden.

Variation: Instead of pre-baked pizza crust, use 1 can (10 ounces) refrigerated pizza crust. Unroll crust on baking sheet and press to desired size. Continue as above, except bake at 425°F for 15 minutes, or until crust is golden brown.

NOTE: A 10-ounce box of frozen chopped spinach can be substituted for the fresh. Thaw and thoroughly drain spinach, then cook with onion until liquid evaporates
