Tomato Caesar Skillet
4 small boneless skinless chicken breast halves
1 tablespoons oil
1/4 cup chicken broth
1/4 cup classic Caesar dressing
1 teaspoon dried basil leaves
2 tablespoons fresh parsley, chopped
4 plum tomatoes, seeded and chopped
2 tablespoons bacon bits
Cook chicken in hot oil in large covered skillet on medium-high heat five minutes on each side or until browned. Stir in broth, dressing, basil and parsley until well blended. Bring to simmer; cook an additional three minutes. Add tomatoes and bacon bits; stir to combine. Cook two to four minutes or until vegetables are tender.
Yields four servings.
