Tomato Soup!

Hi there, im new to these forums so bare with me please :slight_smile:

Im looking to cook simple, healthy tomato soup! Just tomatos with a bit of seasoning salt,pepper etc but I have no idea how I would thicken it up. I don’t want to put cream in because im not to keen on it… would corn flour work or would it give it a weird taste?

Ive searched online but they all have onions etc in I just want simple enjoyable healthy soup.

You can omit the onions and add 1 t. onion powder if you want

try this one (if you like)

3 cups chopped tomatoes
½ cup chopped onions
5 tablespoons butter
4 tablespoons flour
½ teaspoon baking soda
4 cups milk
1 ½ teaspoon sugar
1 ½ teaspoon salt
1-2 bay leaves
Season to taste – oregano/basil/garlic

Melt butter then add onions cook 1-2 minutes
Add milk – flour – sugar – salt and cook till thicken

Add baking soda to the tomatoes, mix then put into the milk mixture
Add seasoning and simmer till hot.

Then put mixture into blender or processor.
Serve hot makes 6 servings .

some use chicken broth in place of the milk/cream required

What is chicken broth? Is this chicken stock? (stupid question)

chicken broth and stock are the same thing - some will use chicken bouillon as a substitute - if you do - watch the salt you add because of the salt in the bouillon

the baking soda is for the acidity in the tomatoes (as is the sugar) - and the baking soda seems to improve the flavor

the flour is your thickener
