Tortellini Soup

Tortellini Soup

This is so good, and quick & easy. The Parmesan cheese really makes the difference. I serve it with toasted French bread and a salad.

3 (14 1/2-ounce) cans chicken broth
2 (9-ounce) packages refrigerated cheese-filled tortellini (or 1 18 oz. package frozen )
1 (14 1/2-ounce) can diced tomatoes, undrained
4 green onions, chopped
2 garlic cloves, minced
2 teaspoons minced fresh or 1 teaspoon dried basil
Garnish: shredded Parmesan cheese

Bring broth to a boil in a large saucepan over medium-high heat; add tortellini and next 4 ingredients. Reduce heat, and simmer 10 minutes. Ladle into serving bowls, garnish with Parmesan.
