Tower of Piza Pizza Salad
2 cups whole pitted California ripe olives
3 cups plum tomatoes – seeded and 1/2-inch diced
1 cup green bell pepper – 1/2-inch diced
1 cup cooked Italian sausage – 1/2-inch diced
2 cups Mozzarella cheese – 1/2-inch diced
1/2 cup Italian dressing
1/2 cup fresh parsley – chopped
Combine ripe olives with next five ingredients in large bowl. Stir gently. Cover. Refrigerate at least 1 hour. Add chopped parsley. Stir gently. Serve in lettuce-leaf cups or over shredded lettuce leaves.
