Tropical Layer Cake

Serves 10

1 (18.25 ounce.) yellow cake mix
1/2 Cup vegetable oil
4 eggs slightly beaten
1 (11 ounce.) can mandarin oranges undrained
3 ripe bananas
1/2 Cup coconut for garnish
maraschino cherries for garnish
mandarin oranges for garnish

FROSTING:
1 (10 oz) whipped topping thawed
1 (8 oz) can crushed pineapple undrained
1 (3 ounce.) box instant coconut cream pudding
3/4 Cup coconut

Mix first four ingredients together and beat until combined, using medium
speed. Pour into 2 greased 8" round pans. Bake in 350° oven for 25 - 30
minutes. Cool on wire racks.

FROSTING:

Mix all frosting ingredients together.

Frost top of bottom layer. Slice 3 ripe bananas lengthwise and put on top of
frosted bottom layer.

Put cake layers together and frost remaining cake.

Garnish with mandarin orange slices (well drained, whole maraschino
cherries, well drained and 1/2 c. coconut. Refrigerate.
