TROY’S CHICKEN SALAD FROM SUNDANCE TRAIL RANCH
Ingredients:
12 ounces cooked, diced chicken
2 stalks diced celery
20 pecans, toasted
1 shallot, diced
2 hard boiled eggs, diced
1 teaspoon lemon juice
3 to 4 ounces mayonnaise
Salt and pepper to taste
Combine chicken, celery, pecans, shallots, eggs and lemon juice.
Fold in mayonnaise.
