True Greek Salad
This refreshing salad is bursting with flavour. No lettuce to wilt means you can make this one ahead of time too!
Prep time: 5 minutes
Servings: 4-6 servings
4 tomatoes cut into wedges
1 cucumber, peeled and diced
1/3 cup (75mL) thinly sliced or diced red onion
1 green pepper, sliced into rings or diced (e.g., cubanelle or bell)
1/4 cup (50 mL) finely chopped parsley
1/2 lb (250g) feta cheese, diced
12 ripe pitted olives
Dressing
3/4 cup (175 mL) olive oil
6 tbsp (90mL) ReaLemon Lemon Juice
Salt and Freshly ground pepper, to taste
Pinch dried oregano leaves
Combine tomatoes, cucumber, red onion, green pepper, parsley, feta cheese and olives. Whisk together olive oil, lemon juice, salt, pepper and oregano. Pour over salad and toss well.
