Turkey Lentil Soup
2 Garlic Cloves, Minced
1 Onion, Finely Chopped
1 Red Pepper, Coarsely Chopped
1 Tbsp Olive Oil
3 Cups Turkey Broth
1 - 19 Oz Can Lentils Or Black Beans,
Drained & Rinsed
2 Cups Cooked Turkey Cut Into Bite
Sized Pieces
1 Tsp Each: Thyme & Cumin
½ Tsp Freshly Ground Black Pepper
½ Cup Each: Frozen Peas & Corn
Heat Oil In A Large Saucepan Over Medium Heat.
Add Garlic, Onion & Red Pepper. Stir Occasionally Just Until Tender, 5 Minutes.
Add Broth. Stir In Lentils, Turkey, Thyme, Cumin & Black Pepper.
Bring To A Boil, Then Reduce Heat To Medium Low & Simmer Gently To Develop Flavours, About 10 Minutes.
Stir In Corn & Peas. Continue Cooking Just Until Heated Through, About Another 5 Minutes.
Makes 7 Cups.
