Turnip Greens

1 large bunch Turnip Greens
4-5 strips bacon, diced
1 small onion, diced fine
1 pince of Red Pepper Flakes
3 dashes Trappies or other Pepper Vinegar

Dice the bacon and brown in skillet that can be covered. When bacon gives off enough grease, add finely diced onion and cook until translucent. Add Red Pepper flakes then add the washed and torn turnip green, still damp, and toss in grease then cover and allow to steam. When greens wilt to desired doneness( I like mine still a bit crispy) Sprinkle with Trappy’s or other spiced vinegar and toss and serve.

Trappy’s is a vinegar that has small hot peppers in it for flavor. TObasco or Crystal Hot Sauce can also be used.

I find that most folks who boil greens with pork necks of ham cook them so the flavor is in the cooking water and the greens have no flavor and are cooked to mush. THis way they stay crisp and the vitamins and minerals are still in the greens, not thrown away with the juice they do not drink!

Other greens can be cooked the smnae way. Collard, Mustard Greens, KAle, Spinache
