Turtle Muffins

1 1/4 C Flour
1/2 C Unsweetened Cocoa Powder
2 tsp. Baking Powder
1/4 tsp. Salt
1 1/2 C Sugar
2 Eggs
3/4 C milk
1/3 C Oil
2 tsp. Vanilla
1 C Chopped Nuts
12 Carmel Squares

Oven 375. Grease 24 mini muffin tins. In medium bowl, combine
flour, cocoa powder, baking powder and salt. In a large bowl, whisk
together sugar, eggs, milk, oil and vanilla. Stir in flour mixture
just until combined. Fold in nuts. Do not overmix. Spoon batter
into prepared cups; place ½ caramel square into the center of each
muffin. Bake 20 to 22 minutes or until puffed and tester inserted in
middle comes clean. Let cool in pan on wire rack for 5 minutes;
remove from pan and cool completely on rack.
