Veal Marsala Burgers

Veal Marsala Burgers


1 1/2 tablespoons butter
1 tablespoon shallots, minced
1 teaspoon garlic, minced
8 medium button mushrooms, sliced
salt and freshly ground pepper
1/4 cup Marsala wine (dry)
1 pound ground veal, formed into patties
hearty Kaiser rolls
baby spinach leaves

Sauté the shallots, garlic and mushrooms in the butter until they start to caramelize. Season with salt and pepper if you wish. Add the Marsala carefully as it will ignite. Reduce to almost no liquid and keep warm

Grill veal burgers to your liking and place them on top of the bottom Kaiser roll which has been spread with mayonnaise and topped with spinach leaves. Top with Marsala mushrooms and cover with top bun.
