Vegetable Confetti Rice
2 c. water
1 T. margarine
1 chicken flavor bouillon cube
1/2 red pepper - diced
1/2 c. frozen green peas - thawed
1/2 c. sliced celery - chopped
1 T. green onion
3/4 c. uncooked regular rice
1/2 c. carrot - shredded
Bring water, margarine and bouillon cube to a boil. Stir to dissolve cube. Add rice, carrot, celery, and onion; mix well. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until rice is tender and liquid is absorbed. Stir in peas; cook an additional 5 minutes.
