You can use vegetables to use as a rack when baking your meats. Just line your baking pan with no-stick foil and line the bottom of the baking pan with veggies like, carrots, onions, celery, potatoes or veggies you want to use. Just so there’s no conflict I read this idea in the Cooking Light mag. I used it last night and it was great the roast tasted so good as it absorbed the flavor from the veggies. You can also use chicken or pork. Bake meats real slow so the veggies won’t cook away.
